For the Vegan Wontons:
  • 1 cup firm tofu, pressed and crumbled
  • 1 cup shredded napa cabbage
  • 1/2 cup shredded carrots
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated ginger
  • Vegan wonton wrappers
For the Soup:
  • 6 cups vegetable broth
  • 1 cup sliced shiitake mushrooms
  • 1 cup baby bok choy, chopped
  • 1/2 cup sliced bamboo shoots
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • Salt and pepper to taste
Optional Garnishes:
  • Chopped green onions
  • Sesame seeds
  • Red pepper flakes

Instructions:

  1. Prepare the Vegan Wonton Filling:
    • In a bowl, combine crumbled tofu, shredded napa cabbage, shredded carrots, chopped green onions, minced garlic, soy sauce, sesame oil, and grated ginger. Mix well to create the wonton filling.
  2. Assemble Vegan Wontons:
    • Place a spoonful of the filling in the center of each vegan wonton wrapper. Moisten the edges of the wrapper with water and fold in half, sealing the edges to create a triangle. Press the edges firmly to secure the filling inside.
  3. Prepare the Soup Base:
    • In a large pot, combine vegetable broth, sliced shiitake mushrooms, chopped baby bok choy, sliced bamboo shoots, soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, salt, and pepper. Bring the soup to a simmer over medium heat.
