INGREDIENTS:

  • Two tablespoons of olive oil
  • One packet (2 ¼ tsp) active dry yeast
  • 1¼ cups of warm water (about 45°C/110°F)
  • Three and a half cups of bread flour/general-purpose flour.
  • A couple of tablespoons of sugar/maple syrup
  • One teaspoon of salt

INGREDIENT NOTES

Flour:

  • All-purpose flour produces a soft loaf, whereas bread flour produces structurally chewier slices. A blend of all-purpose and wheat may be used to provide a nutty taste.

Yeast:

  • Active dry yeast is perfectly fine to use, but instant yeast would be fine as well and can also be added directly to the flour. Make sure that the yeast is fresh, so that the bread may rise correctly.

Warm water:

  • Water must be warm, not hot. When it is overheated, it may kill the yeast, and when it is under-thawed, the yeast may not germinate.

Olive oil:

  • Preserves the bread moist and prevents it from drying out too rapidly. Canola or sunflower oil is also recommended.

Sugar:

  • Supports the yeast and provides a mild sweetness. It can be switched out for maple sugar or agave nectar.

INSTRUCTIONS:

  1. In a small pan, whisk the warm syrup, water, and dough.

TIPS

  • Give it a little extra flavor by transferring the olive oil onto the top of the loaf before baking.
  • To make the crust softer, wrap the bread with a clean towel when it is cooling.
  • Place a small pan of boiling water in the oven while the loaf bakes to achieve a crusty loaf.
