Vegan Meatloaf Recipe:
- 2 cups cooked lentils (green or brown), drained
- 1 cup rolled oats
- 1 medium onion, finely chopped
- 1 red bell pepper, finely chopped
- 3 cloves garlic, minced
- 1 cup finely grated carrots
- 1 cup chopped mushrooms
- 1/2 cup tomato sauce
- 1/4 cup soy sauce or tamari
- 2 tablespoons ground flaxseeds + 6 tablespoons water (flax egg)
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil (for greasing)
For the Glaze:
- 1/4 cup ketchup
- 2 tablespoons maple syrup or agave nectar
- 1 tablespoon balsamic vinegar
- Preheat your oven to 375°F (190°C) and lightly grease a loaf pan with olive oil.
- In a small bowl, mix the ground flaxseeds and water to create the flax egg. Set aside to thicken.
- In a large mixing bowl, combine the cooked lentils, rolled oats, chopped onion, red bell pepper, minced garlic, grated carrots, and chopped mushrooms.
