The original one is stuffed with dairy and gelatin, whereas this is 100 percent vegan. It is equally eye-appealing and delicious. The crust is golden and flaky and is filled with filling. Every slice tastes of summer on a dish. INGREDIENTS:
- One vegan pie crust pre-baked & cooled
- 1½ pounds fresh strawberries
- ¾ cup water
- Pinch of salt
- 2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- ¾ cup granulated sugar
- 1 teaspoon vanilla essence
INGREDIENT NOTES:
Strawberries:
- Use bright red and ripe strawberries as they are best in flavor and color. Do not use mushy or underripe ones.
Cornstarch:
- Applied to make the filling the right consistency. Arrowroot powder is also an excellent substitute to make it smooth.
Lemon Juice:
- Some fresh and tangy brightness to counter the sweetness. Only freshly squeezed juice will deliver the greatest payoff in taste.
Sugar:
- To make the recipe completely vegan, use organic cane sugar. The amount might need to be changed based on how sweet you like your food.
Vanilla:
- Improves the flavor and also gives warmth to the dressing. Vanilla essence is the most intense and has the finest scent.
Vegan Pie Crust:
- Pre-baked crust is a time saver. But you may also use vegan butter to give it a flakier taste & a homemade look.
INSTRUCTIONS:
- Clean the strawberries and remove the hulls.
- Cut them in half as well. Depending on your preference, leave the remainder entire or cut in half.
- In a big bowl, set aside.
- Add the sugar, cornstarch, water, citrus juice, and salt to a saucepan.
- While smooth, whisk.
- Set the heat to medium rare.
- Cook, stirring frequently.
- When the mixture thickens and becomes shiny, remove it from the fire.
- Add the vanilla essence and stir.
- Give the glaze ten minutes to cool.
- Cover the fresh strawberries with the heated glaze.
- To ensure they are equally coated, carefully twist.
- Give the mixture fifteen minutes to cool.
- After the pie shell has cooled, spoon the glazed strawberries into it.
- Evenly distribute the berries. To fit, lightly press.
- Put the dessert in the freezer for less than four hours.
- As the glaze cools, it will solidify.
- Don’t cut till it’s completely set.
- Cut with a sharp knife.
- Serve cold.
- Topping mint/vegan whipped cream on the highest (optional)
TIPS:
- Bake your crust in advance so it will not be soggy.
- For ideal slicing, freeze the pie for less than four hours.
- The strawberries should be fresh & should not be frozen.
- Decorate with a few whole berries.
- Never omit the lemon juice. It cuts the sweetness out.
- Tasting the glaze prior to adding berries. Add more sugar/lemon to taste.

Refrigerator:
- Maintain for at least three days in your freezer. Keep it in a jar that is sealed/covered with foil.
Freezer:
- It is not advised to freeze. Once thawed, the fresh strawberries will become watery.

- No. The frozen berries give out too much moisture. Fresh only.
