Purple Sweet Potato Pie

The vegan Purple Sweet Potato Pie is something spectacular. It gets its colorful shade due to purple sweet potatoes, of course, beautiful in themselves. The pie is decadent, creamy & indeed not too sweet. It is creamy and similar to regular pumpkin pie filling on the inside. Vegan Purple Sweet Potato Pie can be served at festivals/or any other celebration. The taste is full-bodied with an earthy & slightly nutty flavor with a warming spice. The vegan crust is crackly on the edges & soft on the bottom & takes care of the filling. Cornstarch and coconut milk make it creamy. The purple color will make your dessert table magical.

INGREDIENTS

Regarding the crust

  • Almond flour, 1 and a half cups
  • 1/4 cup solid (not melted) coconut oil
  • Two teaspoons of maple syrup
  • A pinch of salt
  • Regarding the filling
  • Mash two cups of cooked & peeled purple sweet potatoes.
  • Half a cup of full-fat coconut milk
  • One-third cup of maple syrup
  • Two teaspoons of brown sugar
  • The two teaspoons of cornstarch
  • One teaspoon of vanilla essence
  • A teaspoon of cinnamon powder
  • One-fourth of a teaspoon of nutmeg
  • 1/8 teaspoon of cloves
  • One-fourth of a teaspoon of salt

INGREDIENT NOTES

Violet sweet potatoes:

  • Okinawan/Stokes variety works well.. Steam/boil until soft, & mash them.

Almond flour crust:

  • Nutty, gluten-free. If you’d like, you may also use vegan crust from the shop.

Coconut milk:

  • Use the full-fat variety of canned for a creamy texture. Shake Before Use.

Maple syrup:

  • Tends to add a mellow sweetness. If needed, you can substitute agave.

Cornstarch:

  • Also helps thicken & set the filling without the need for eggs.

Spices:

  • Cinnamon, nutmeg, and cloves offer a comforting warmth.

INSTRUCTIONS

  1. Set the oven’s temperature to 350°F (175°C).
  2. Lightly coat the pie plate with coconut oil.
  3. In a bowl, combine the almond flour, salt, coconut oil, and maple syrup.
  4. Till a soft dough develops, stir.
  5. Evenly press the dough into the pie plate.
  6. Smooth it up the sides with your fingertips.
  7. Make several holes in the crust with a fork.
  8. For ten minutes, bake the crust. Take out and put aside.
  9. Mash the purple sweet potatoes in a separate dish till they are smooth.
  10. Stir in vanilla, brown sugar, maple syrup, & coconut milk.
  11. Add salt, cloves, nutmeg, & cinnamon.
  12. Add cornstarch and stir until fully incorporated.
  13. Blend the ingredients until they’re creamy for a smoother filling.
  14. Fill the cooked crust with the filling.
  15. Use a spatula to spread evenly.
  16. To get rid of air bubbles, softly tap the dish.
  17. Bake till edges are firm, 35 to 40 minutes.
  18. There may be a tiny wiggle in the middle.
  19. When it completely baked take it out from oven and gave to it rest at room temp.
  20. Please refrigerate for at least four hours, but preferably overnight.
  21. Slice and drizzle with coconut whipped cream.

TIPS

  • Punch the pie to cool completely before slicing to get a sharp cut.
  • In case of canned purple sweet potato, drain & then mash.
  • Do not forget to add some lemon juice to enhance the taste.
  • Before baking, add crushed pecans on top & use an extra crunch.
  • Before baking, check the taste of the filling.
  • Adequate sweetness/spice can be added.

STORAGE INFORMATION

Fridge

  • Keep pie in a covered container. Stays fresh for 4 days.

Freezer

  • Freeze slices wrapped in parchment & foil. Soften in the fridge overnight.
