INGREDIENTS:

  • One medium ripe banana
  • 2 tbsp vegan milk
  • One sheet vegan puff pastry
  • 2 tbsp granulated sugar

INGREDIENT NOTES:

RIPE BANANA:

  • We use this banana to make the filling of the pinwheels. A ripe banana gives a natural sweet taste and fruity texture in the dessert. You may use apples or pears as per your preference.

VEGAN PUFF PASTRY:

  • It makes the flaky outer layer of the pinwheels. This puff pastry makes the recipe easy and gives better results. You may use vegan crescent dough as an alternative.

VEGAN MILK:

  • This milk is used to brush the pinwheels before baking. It gives a golden surface to the rolls and sticks sugar to it. You may use almond milk, oat milk, or soy milk as an option.

GRANULATED SUGAR:

  • It gives sweetness and lightly caramelizes the tops of the pinwheels. Brown sugar is good to use as a substitute.

INSTRUCTIONS:

  1. First, warm the oven to 180°C and include baking paper on the tray.
  2. Cut the peeled banana evenly into thin slices so they cook well.
  3. Lightly flour the clean surface and put the vegan puff pastry on it then gently roll.
  4. Arrange the banana slices on the puff pastry in neat rows and leave some space between the rows.
  5. Roll the puff pastry into a log and keep it tight, but do not press it down.
  6. Seal the roll and chill it for ten minutes in the refrigerator.
  7. Take the chilled roll from the refrigerator and cut it into 1-inch-thick slices with a sharp knife.
  8. Put the pinwheels cut-side up on the tray and put some space between them.
  9. Pour vegan milk into the bowl and use it to brush the tops of the pinwheels.
  10. Sprinkle granulated sugar lightly on them and bake these pinwheels for 30 minutes.
