Recipe: Vegan Black Bean Brownies

Ingredients:

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/2 cup cocoa powder
  • 1/2 cup rolled oats
  • 1/4 cup maple syrup or agave nectar
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond butter or any nut butter of your choice
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • 1/2 cup vegan chocolate chips (optional)

Instructions:

Preparing the Batter:
  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch (20×20 cm) square baking pan or line it with parchment paper.
  2. In a food processor, combine the drained and rinsed black beans, cocoa powder, rolled oats, maple syrup or agave nectar, melted coconut oil, almond butter, vanilla extract, baking powder, and a pinch of salt.
  3. Process the ingredients until you have a smooth and well-combined batter. You may need to stop and scrape down the sides of the food processor to ensure everything is mixed thoroughly.
  4. If you’re using chocolate chips, fold them into the batter at this point.
