INGREDIENTS:

  • 1 package phyllo dough
  • Half cup water
  • 1 cup melted vegan butter
  • Two cups chopped mixed nuts
  • 1 tsp ground cinnamon

PHYLLO DOUGH:

VEGAN BUTTER:

  • We use this butter gives richness and makes the phyllo layers crispy. Melt it well so it becomes easy to brush on the pastry. Utilize coconut oil as a replacement.

MIXED NUTS:

  • They give a crunchy and nutty filling in the rolls. You may use only walnuts, pistachios, or cashews as per your choice.

MAPLE SYRUP:

  • It is a good alternative of honey to make the recipe vegan. It makes the sticky and sweet syrup that soaks into the phyllo rolls easily. Utilize vegan honey-style syrup as another idea.

LEMON JUICE:

  • This juice adds acidity to the syrup to maintain the sweetness. Lemon juice gives a fresher and brighter taste to the dessert. Include orange juice if you are not using lemon juice.

INSTRUCTIONS:

  1. First, warm the oven to 350°F and coat the dish with vegan butter.
  2. Mix chopped nuts and sugar in the bowl to make the filling.
  3. Unroll the dough and cover the unused sheets so they do not become dry.
  4. Put one phyllo sheet on the surface and brush lightly with vegan butter.
  5. Then add another sheet on top, then brush lightly with butter and repeat the steps till you get 4 layers.
  6. Spread a thin layer of nut mixture on the phyllo and carefully roll it into a tight log starting from one long side.
  7. Include the roll  in the dish seam-side down, then repeat the steps with remaining phyllo and nut mixture.
  8. Use vegan butter to brush the tops of the rolls and bake for 35 minutes.
  9. Gently simmer maple syrup or agave syrup, water, 1/2 cup sugar, vanilla extract, and lemon juice in the saucepan on medium flame.
  10. Cook the mixture for ten minutes, then take the baklava rolls and pour the warm syrup on them.
  11. Cut the baklava rolls 2-3 inches long and cool them for three hours.
  12. Lastly, serve the rolls when they have absorbed the syrup well and cooled.
