INGREDIENTS:
- One tablespoon lemon juice
- 2 medium zucchini
- 2 tablespoons olive oil
- 3 cloves garlic
- 1/3 cup vegan cashew cheese
- ½ tsp. salt
- ¼ tsp. black pepper
- ½ tsp. Italian seasoning
- Fresh parsley
- Two tablespoon nutritional yeast

ZUCCHINI:
- Use the firm, medium-sized zucchini to prepare this steak. The zucchini should be fresh for the best texture. They will keep their shape better than the small or frozen versions.
OLIVE OIL:
- Olive oil helps in roasting or grilling these vegetables. It provides the healthy fat content and also makes the dish richer. Use the avocado oil instead if required.
GARLIC POWDER:
- Use the garlic to provide the aroma and taste in the dish. Fresh garlic is best for strong flavors. Avoid using the garlic powder as it doesn’t provide the same results.
VEGAN CHEESE:
- Use the vegan cheese like cashew cheese to top this steak. It provides the cheesy taste while being in this keto diet. Use the nut-free cheese like soy cheese, or sunflower seed cheese if you have nut allergy.
NUTRITIONAL YEAST:
- Nutritional yeast is used to provide the umami and savory taste in the recipe. It will boost the taste of the cheese and also add some nutrients in it.
LEMON JUICE:
- Add the lemon juice to balance the rich taste of the cheese. Use the fresh juice for best results; bottle juice doesn’t taste same.
SALT:
- It is added to make the dish tastier. It also balances the natural sweet taste of zucchini.
BLACK PEPPER:
- Black pepper adds the slight spice in the dish. It will not make the dish spicy and use the fresh pepper for best taste.
ITALIAN SEASONING:
- Use the Italian seasoning or dried oregano to add the herbal taste and aroma to this zucchini steak. It pairs well with cheese & garlic. Use it in small quantities so it doesn’t add the intense taste.
PARSLEY:
- Parsley is used to garnish the dish in the end. It makes the dish light and refreshing. We have to finely chop the parsley so it distributes equally.
INSTRUCTIONS:
- Pre-heat the oven at 200 degrees C.
- Then apply the parchment on the tray.
- Make the slices of zucchini vertically around 2cm thick.
- Put them on the tray and apply the olive oil with brush.
- We can sprinkle some black pepper, oregano, and salt on it.
- Roast the steak for fifteen minutes by flipping them in between time.
- Take a small vessel and add the nutritional yeast, lemon juice, garlic, and vegan cheese in it.
- When it gets done place the tray on shelf and pour the cheesy mixture on it.
- Bake them again for five minutes till it melts.
- Garnish with parsley and serve hot.
