Vegan Chipotle Cauliflower Nachos
Vegan Chipotle Cauliflower Nachos are the best and the most tasty dish with plant-based alternatives. Moreover, cauliflower is the basic ingredient of this recipe. It is a healthy and comforting food topped with cheese. Furthermore, it can be kept in a cool place for later use.
What are nachos?
It is the perfect Mexican dish with tortilla chips. Further, it is topped with some cheese and then with some sauces and the base ingredient.
Ingredients:
- Cherry tomatoes 1/2 cup
- Tortilla chips
- Salt 1/2 tsp.
- Olive oil 2 tbsp.
- Water 3 tbsp.
- Cubed potatoes 1 cup
- Onion powder 1/2 tsp.
- Cauliflower 1 cup
- Apple cider vinegar 2 tbsp.
- Red onion 1/4 cup
- Cashews 1/4 cup
- Pineapple salsa 1/2 cup
- Garlic 1 clove
- Chipotle pepper 1 whole
- Cilantro 1/4 cup
- Black beans 1/3 cup
Instructions:
- Take a medium saucepan, add the cauliflower and the potatoes, and then add the water to it.
- Add the salt and then put the saucepan over medium flame.
- Boil it for a few minutes.
- Lower the flame and then start cooking uncovered until it becomes tender.
- Take a blender and then add the tendered potatoes and cauliflower, cashews, salt, onion powder, garlic, chipotle pepper, olive oil, apple cider vinegar, and water.
- Blend it until it becomes smooth.
- Take a plate, and then place the tortilla chips onto it, and then add then put some chipotle cauliflower sauce to it.
- Put some of the cherry red tomatoes, pineapple salsa, red onion, and then the cilantro.
- Serve and then enjoy with your family.
Tips for making the best version of tacos:
- Do not use all the wet ingredients. Otherwise, It will not make the taco crunchier.
- Use the freshly grated mozzarella cheese as it will melt well.
- Moreover, spread the toppings properly to get an equal taste in all the bites.
- If you are using the preserved or the canned ingredients, thus, drain them properly and make sure that they are not wet.
