Vegan Creamy Carrot Pasta
Introducing you to the delicious recipe of the Vegan Creamy Carrot Pasta, garnished with breadcrumbs and then with carrots. It is a combination of the vegan cream cheese and the carrots. Vegan creamy carrot pasta is very simple and easy to make.
Ingredients:
- Orecchiette pasta 10 oz.
- White miso paste 3 tbsp.
- Salt
- Pepper
- Cashews 1/4 cup
- Water 2 cups
- Carrots 2 cups
- Olive oil 2 tbsp.
- Garlic 4 cloves
- Shallots 2 chopped
Toppings (optional):
- Lemon juice 2 tsp.
- Olive oil 1/2 cup
- Salt 1/4 tsp.
- Lemon zest 1 tbsp.
- Garlic 1 clove
- Italian parsley 1/2 cup
- Chopped carrots 1/2 cup.
Bread crumbs:
- garlic powder
- salt
- Panko bread crumbs
- olive oil
Instructions:
Pasta cooking:
- Take a saucepan, add the pasta to it, and then add the required amount of water to it.
Boil it for almost 5 minutes or till it becomes soft.
Make the sauce:
- Take a medium size pot and then add the oil to it.
- Add the garlic and the shallot in it and then saute until aromatic.
- Add the water and then the cashews, salt, pepper, and salt, and then boil it for a few minutes.
- Cover the pan and then steam for 15 minutes on low heat.
- Furthermore, add the miso sauce in it and then cook it for 10 minutes, and set it for later use.
- Take a large pan and then add the bread crumbs to it.
- Add the olive oil and then salt and pepper to it.
- Stir for 5 minutes and then set aside and then cool it.
Blend the carrots and then make a sauce:
- When the carrots become tender, place them in the blender.
- Blend for at least 10 minutes until it gives a light and silky texture.
- Put the sauce over the drained pasta and then sprinkle the breadcrumbs.
Notes:
- You can also use other veggies in this recipe.
