INGREDIENT NOTES:
VEGAN CREAM CHEESE:
- We use this cheese to make the smooth cheesecake layer. It gives a tangy taste that maintains the sweetness of chocolate. You may utilize a vegan cream cheese alternative as per your choice.
CASTER SUGAR:
- It provides sweetness in the cheesecake layer and makes the mixture smooth. Caster sugar mixes easily with the cream cheese because of the fine crumbs. You may utilize granulated sugar as another idea.
VEGAN DARK CHOCOLATE:
- Dark chocolate gives a rich taste to the brownies and makes them fudgy. You may use vegan semisweet chocolate as an alternative.
BLACK VEGAN FOOD COLORING:
- This food coloring gives a darker Halloween look to the brownies. It makes a striking contrast with the orange cheesecake swirl. You may use vegan gel coloring as a replacement.
INSTRUCTIONS:
- First, cover the tin with baking paper and grease it, then warm the oven to 350°F.
- In a small bowl, mix ground flaxseed with water for ten minutes.
- Whisk vegan cream cheese, vegan yogurt, caster sugar, and vanilla extract in a bowl.
- Stir in orange vegan food coloring to get the bright shade and put the mixture aside.
- Include the vegan dark chocolate and vegan butter in the bowl over a simmering water pan.
- Melt the ingredients smoothly, then cool the chocolate mixture for ten minutes.
- Now whisk the flax eggs and dark brown sugar in a large bowl.
- Slowly include the cooled chocolate and butter mixture in the sugar.
- Fold the plain flour into the batter and include black food coloring, then pour two-thirds of the mixture into the tin.
- Add the orange cheesecake mixture on the brownie batter in small blobs.
- Include the remaining brownie mixture on the cheesecake layer and swirl the mixture together.
