  • 2 quartered red bell peppers
  • 1 1/2 tsp salt
  • 15 ounces plant-based ricotta
  • Half tsp black pepper
  • 1 tbsp ground flaxseed

  • Half cup crumbled vegan feta
  • 2 minced garlic cloves
  • Half cup vegan grated Parmesan
  • 1 tsp dried oregano
  • 1 1/2 cups shredded vegan mozzarella
  • One large handful chopped basil and parsley

INGREDIENT NOTES:

EGGPLANT:

  • Use the fresh eggplant to make up the main vegetable layers of this lasagna, and it will give a soft and tender texture with a mild earthy flavor. It will also add a tasty roasted flavor and help build attractive layers throughout the lasagna. If needed, we would also use large zucchini slices or thinly sliced mushrooms in its place.

ZUCCHINI:

  • Add the fresh zucchini to create tender vegetable layers and a mild, slightly sweet flavor. It will also pair well with the eggplant and creamy ricotta and give the lasagna a delicious taste. If needed, we would also use yellow squash in its place.

RED BELL PEPPERS:

  • Add the red bell peppers to bring natural sweetness, bright color, and a tasty Mediterranean flavor. Roasting them will soften them and draw out their natural sweetness. If needed, we would also use yellow or orange bell peppers in their place.

OLIVE OIL:

  • Use the olive oil to brush the vegetables before roasting, and it will help them turn tender and lightly browned. It will also give the vegetables a rich Mediterranean flavor. If needed, we would also use avocado oil or another mild vegetable oil in its place.

  1. First, put the eggplant and zucchini slices on the colander, then sprinkle both sides with salt.
