Vegan Lentil Stroganoff

Vegan Lentil Stroganoff & Mashed Potatoes is a very cozy dish. It is fat, creamy & has lots of flavor. The meal is more satisfying because of the mashed potatoes. INGREDIENTS:

Regarding the Stroganoff:

  • A single teaspoon of oil from olives
  • 1 little onion
  • A couple of minced garlic cloves
  • A single cup of cooked brown/green lentils
  • A cup and a half of stock made from vegetables
  • Half a cup of sugar-free milk from plants
  • Two teaspoons of soy sauce teaspoons
  • A single tbsp of sugar
  • A half-teaspoon of paprika salt
  • To taste, add pepper as well as salt

For the Potato Mashed:

  • Diced & peeled three medium potatoes
  • Half a cup of sugar-free milk from plants
  • One spoonful of vegan butter
  • Add salt to taste
  • Garlic powder or black pepper is optional

INGREDIENT NOTES:

Lentils:

  • The best use is brown/green lentils. Cook in advance/in a can (and rinsed). They are a source of protein & they make you feel satiated.

Cornstarch:

  • Assists in the thickening of the sauce. Add it to plant milk after mixing. Do not miss/the sauce will result in thinness.

Plant Milk:

  • Unsweetened and plain. Any almond, soy/oat milk will do. Stay away from sweet, high-fat milk/flavored milk.

Potatoes:

  • Make use of russet or Yukon gold. They can be mashed. Square them off to cook evenly.

INSTRUCTIONS:

  1. In salted water, put diced potatoes and boil until soft.
  2. Potatoes can be boiled when oil is warm oil in a frying pan.
  3. Fry 2 to 3 minutes onions.
  4. Add capsicum & garlic. Simmer till tender
  5. Add lentils & mix
  6. Fill a bowl with plant milk & cornstarch.
  7. Pour in broth, soy sauce & paprika in the skillet.
  8. Add cornstarch & milk.
  9. Cook for ten to twelve minutes, stirring, till thickened.
  10. Season it to taste with salt & pepper.
  11. After heating potatoes, it is important to drain them & mash them
  12. Add plant milk, vegan butter & salt
  13. Stir until creamy
  14. Add herbs of your choice

ALTERNATE COOKING METHOD:

Oven (Baked):

  1. Heat the oven to 375°F (190 °C).
  2. Make stroganoff and mashed potatoes.
  3. Put in a greased baking dish, layer the stroganoff.
  4. Spoon mashed potatoes on it.
  5. Slightly oil.
  6. Bake 15-20 minutes, until golden.
  7. Chill halfway, and serve.

Air Fryer:

  1. Ramekins should be oven-proof.
  2. Place the stroganoff and mashed potatoes.
  3. Air fryer at 360°F (182°C) for 10 to 12 minutes.
  4. Cool and then enjoy.

TIPS:

  • To save time, lentils can be prepared beforehand.
  • To make this even more tasty, add additional juice of the lemon.
  • Put on garlic powder on the mashed potatoes.
  • To include more vegetables, put some spinach with the stroganoff.
  • To do leftovers or meal portions, just make it in twice the quantity.

STORAGE INFORMATION:

FRIDGE:

  • Store leftovers in a closed container that is airtight. Keep for a maximum of three days. Fry up again in a microwave or pan.

FREEZER:

  • Keep for less than a month in sealed plastic bags. Place it in the freezer to thaw for a few hours. Before serving, reheat & stir carefully.
