Ingredient Notes
All-purpose flour: I used this flour to prepare the cookie dough. We can also use alternatives to this flour like almond, gluten-free, or wheat flour.
Sugar: We used fine powder white sugar. Replace it with other sugar items like xylitol, coconut, or cane sugar.
Jam: You can choose jam according to your taste buds. Strawberry, raspberry, blackberry, cherry, or apricot jams are good options. You can opt for layering.
Flax seeds: These seeds are used as an alternative to eggs.
Baking Powder: Add this item to combine and maintain the cookie shape.
Butter: It gives a smooth and buttery flavor.
Instructions
- Making of cookie dough
- First, warm the oven to 350 degrees to bake the cookies.
- Next, add the baking powder, all-purpose flour, and salt in a bowl.
- Mix all ingredients with the spoon. Set aside it.
- Dip the flax seeds in a small dish of water. Put aside a bowl until the seeds are doubled in size.
- Next, take another bowl and add sugar and vegan butter. Whisk it for 2-4 minutes until smooth.
- Add vanilla essence and almond extract with soaked flax seeds to the same bowl.
- Now, transfer this wet mixture to the dry batter. Mix thoroughly to get a soft dough.
Preparation of cookies
- Next, shift the dough to the clean baking sheet and roll it with a rolling pin until it is a quarter of an inch thick.
- Place the rolled dough on a baking dish and store in the freezer for fifteen to twenty minutes, or refrigerate it for half an hour.
- After a few minutes, take out the baking dish from the fridge.
- Cut the dough by using a shape cutter of your choice.
- Transfer the shaped cookies to a baking tray (mist it with oil).
- Bake it for 9–13 minutes until it’s soft and crispy.
Assembling the cookies
- Now, cool cookies at a normal place for 10-15 minutes.
- Shift the baked cookies to a clean sheet. Dust with granulated white sugar using a strainer.
- Next, spread the jam over the cookies with the spoon and again sprinkle white sugar.
- Decorate all other cookies with the same steps.
- The tasty and crunchy cookies are ready to eat.
