INGREDIENTS:
- 6 rice paper wrappers
- Half cup crumbled firm tofu
- 1 cup shredded cabbage
- Half cup julienned carrots
- 1 tsp garlic powder
- Half cup sliced mushrooms
- Half tsp black pepper
- 1 tbsp soy sauce
- 2–3 tbsp water
INGREDIENT NOTES:
RICE PAPER WRAPPERS:
- We use them to make the outside of the spring rolls. These wrappers are dry but become soft when we dip them in the water. You may use large lettuce leaves as per your preference.
SHREDDED CABBAGE:
- It gives fresh crunch to the recipe and adds volume without making the filling heavy. You may use shredded lettuce or bok choy as another choice.
JULIENNE CARROTS:
- They include a natural sweet taste and pleasant crunch to the recipe. You may use sliced bell peppers as a substitute.
MUSHROOMS:
- These mushrooms give a soft filling and savory texture to the dish. They give a naturally rich taste that makes the rolls satisfying. You may use oyster mushrooms as another idea.
INSTRUCTIONS:
- First, wash all the vegetables properly and dry them well.
- Slice the mushrooms then shred the carrots and cabbage.
- Warm the skillet on medium heat and cook the mushrooms with 1 tbsp water for 3 minutes.
- Add the cabbage, carrots, and 1 tbsp water, then cook the vegetables for 4 minutes.
- Stir in tofu, soy sauce, garlic powder, and black pepper for 3 minutes, then turn off the flame.
- Cool the filling properly and remove extra liquid from it.
- Fill the dish with warm water and dip one rice paper wrapper for ten seconds.
- Take it out and put it on a clean plate, then add 1/6 of the vegetable and tofu mixture in the middle of the wrapper.
- Fold the lower edge of the wrapper on the filling, then both sides toward the center.
- Roll the wrapper tightly upward and repeat the steps with the remaining rice paper wrappers.
- Preheat the air fryer for three minutes at 375°F then air fry the rolls for ten minutes.
- Lastly, serve the warm oil-free spring rolls.
