INGREDIENT NOTES:

SOFTENED VEGAN BUTTER:

  • This butter adds rich taste and tenderness and holds the cookies nicely. We would also utilize the refined coconut oil instead if required.

GRANULATED SUGAR:

  • It makes the cookies sweet and creates crispy edges. This sugar works well with the vegan butter to make the creamy base. You may use coconut sugar as an alternative.

ALL-PURPOSE FLOUR:

  • Add this flour to provide structure, and it will also maintain the shape of the cookies. You can also utilize gluten-free flour if required.

CANDIED PINEAPPLE:

  • We use it to include tropical fruit taste and chewy texture in the dessert. It pairs with the cherries, raisins, dates, and warm spices. You may use candied orange peel as a substitute.
