Ingredients:
- Two (2) tablespoons of Olive oil
- Crushed Garlic cloves 2
- Chopped red onion 1/2 cup
- Celery Stalk 1/2 cup
- Carrots 1/2 cup
- Vegetable broth 3 cups
- Two (2) tablespoons of Tomato paste
- White Beans 15oz
- Canned tomatoes, 15oz
- Black pepper 1/4 tsp, or add to taste
- Pasta 1 cup
- Dried Oregano 1/2 tsp
- Salt 1/2tsp
- Dried thyme 1/2 tsp
Instructions:
Stovetop:
- Drizzle one or two tablespoons of olive oil in a nonstick skillet. Put it over a medium flame.
- Add the chopped garlic, onions, carrot, and celery to the heated oil.
- Saute all items for five to seven minutes or until the onion color changes.
- Next, add canned tomatoes, tomato paste, dried oregano, and dried thyme.
- Cook it until the tomatoes are soft.
- After that, add vegetable broth, white beans, salt, and black pepper.
- Mix well all ingredients with a spoon.
- Now cook it for twenty minutes.
- Meanwhile, we will prepare the pasta.
- To a large pan, add water and a pinch of salt. Heat it until it boils.
- Now add the pasta to this salted, boiled water.
- Cook it according to the instructions mentioned in the box, or it will become chewable.
- Now, add cooked pasta to the boiling soup. Toss it well.
- Sprinkle over herbs and seasonings according to taste.
