Servings: Makes approximately 2 servings

  • 14 oz (400g) firm tofu, drained and pressed
  • 1 tablespoon nutritional yeast (optional, for a cheesy flavor)
  • 1/2 teaspoon turmeric powder (for color and an eggy taste)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1 tablespoon unsweetened plant-based milk (e.g., almond, soy, or oat milk)
  • 2 tablespoons vegetable oil or vegan butter
  • Salt and black pepper, to taste
  • Fresh herbs (e.g., chives or parsley) for garnish

  1. Start by draining the firm tofu and gently pressing it between paper towels or a clean kitchen towel to remove excess moisture. Press for about 10-15 minutes to ensure the tofu is as dry as possible.
  2. In a medium bowl, crumble the drained tofu into small pieces using your hands or a fork.
  3. Add the nutritional yeast (if using), turmeric powder, garlic powder, onion powder, ground cumin, plant-based milk, and a pinch of salt and black pepper to the crumbled tofu. Mix well until all the ingredients are evenly incorporated, and the tofu is coated with the seasonings.
  4. In a non-stick skillet or frying pan, heat the vegetable oil or vegan butter over medium heat.
  5. Once the oil is hot, add the seasoned tofu to the pan.
  6. Cook the tofu scramble for about 5-7 minutes, stirring occasionally, until it’s heated through and lightly browned.
  7. Taste the tofu scramble and adjust the seasonings as needed. Add more salt, black pepper, or any other spices to suit your taste preferences.
  8. Once the vegan scrambled eggs are cooked to your liking, remove the pan from the heat.
  9. Garnish the scramble with fresh herbs, such as chopped chives or parsley, for added flavor and color.
