  • Two tbsp olive oil
  • 1 tbsp lemon juice
  • ⅛ tsp black pepper
  • One small minced garlic clove

INGREDIENT NOTES:

SWEET POTATOES:

INSTRUCTIONS:

  4. Warm the skillet on medium heat and cook spinach for 3 minutes, then garlic for 30 seconds.

  6. Mix vegan ricotta, spinach, lemon juice, Italian seasoning, salt, lemon zest, black pepper, and nutritional yeast in the bowl to make the creamy filling.
  7. Combine parsley, olive oil, basil, lemon juice, salt, garlic, water, and pepper in the small bowl.
  8. Take the potatoes from the oven and carefully cut a slit lengthwise on the top of the potatoes.
  9. Gently press the sides apart to make an opening, then spoon the spinach filling on them.
  10. Bake the potatoes for ten minutes, then take them out of the oven.
  11. Lastly, drizzle fresh herb mixture on top and serve the potatoes warm.
