Vegan Taquitos
Vegan Taquitos is a creamy, flavorful, and vegan-friendly recipe. The word Taquito is derived from Spinach, which means small taco. Fill the wraps with black beans, spices ( listed below), and vegan cashew cream sauce. It is a gluten-free and easy recipe. We baked wraps in an oven instead of frying. Deep frying increases the calorie points and also affects health which causes severe issues. You can also simmer it in the air-fryer to maintain the calorie and other nutrient values. These Vegan Taquitos give a beautiful brown color when baked. You can make wraps in your style. This recipe is ideal for lunch, or dinner. Let’s make this dish together by following the instructions.

Ingredients
- Canned Black Beans 15oz
- Canned Diced Green Chiles 4oz
- Chopped green onions 3
- Chili powder 1tsp
- Ground Cumin 1/2tsp
- Garlic Powder 1/2tsp
- Salt 1/4-1/2tsp
- Sriracha Hot Sauce 1 tsp
- Vegan Cashew Sour Cream 1/2cup
- Tortillas 24
Ingredient Notes
Black Beans:
- We use refried canned black beans. Instead of this, you can use pinto black beans.
Green Chiles:
- Substitute it with jalapeno chile powder, roasted green chilies, jalapeno, and serrano peppers. The level of spiciness will vary from pepper to pepper.
Garlic Powder:
- You can prepare the garlic powder at home. But I used ready-made powder.
Tortilla:
- I used corn tortillas to make Vegan Taquitos. You can use almond flour tortillas to avoid gluten.
Vegan Cashew Sour Cream:
- We used a store-bought brand of cream.
Instructions
- Switch on the oven and maintain its temperature to 425 degrees.
- Next, take a baking pan and cover it with parchment paper.
Preparation of Filling
- Put the canned black beans and green chiles (canned) into a colander to remove the sodium and water.
- Add chopped onions, ground cumin, garlic powder, cashew sour cream, salt, chili powder, and sriracha hot sauce in a bowl.
- Next, mix the drained beans and green chiles in the same bowl.
Combine all items with a spoon. Set aside the bowl.
Soften the tortillas
- Shift five corn tortillas to moist paper and microwave for approximately thirty seconds.
- After that, assemble the wraps.
Assembling
- Place warmed tortillas on a plate.
- Spread over the two tablespoons of filling and secure them with a toothpick.
- Shift into the baking tray. Mist the tortillas with olive oil by using a brush.
- Bake tortillas for 14 to 20 minutes or until the outer surface is crispy.
- Place the baked wraps on a serving plate.
- Enjoy the tasty wraps with vegan cashew sour cream or any dipping sauce.
Taquitos toppings and garnishes ideas
- You can make Taquitos wraps by adding different plant-based items and vegan-friendly sauces (listed below).
- We use Vegan nacho cheese, green onion cashews, creamy cilantro lime, and vegan sour cream to drizzle. Pour sauce over the top of taquitos for a creamy flavor.
- Jalapeno chimichurri sauce is used for a herbed and colorful texture.
- Spread the Pico de gallo, or guacamole. You can also pick the salsa of your choice.
- Fill the wraps with different veggies, such as chopped romaine lettuce, caramelized onions, sliced cucumbers, tomatoes, lime wedges, mushrooms, fresh herbs like cilantro, coriander, mint, chopped onions (pick any color of onion), and sliced jalapenos.

- You can pair this dish with Spanish rice, grilled vegetables, Mexican street corn, scrambled tofu, grilled pineapple slaw, roasted sweet potato wedges, corn salad, and spicy pinto bean dip.

Fridge:
- You can store the remaining Taquitos in an airtight jar and refrigerate it for 3/4 days.
Freezer:
- We can freeze these wraps as well. Wrap it into the parchment, or plastic wrap papers and freeze it for 3/4 months. You can freeze both baked or unbaked Taquitos.
Reheating:
- Rewarm the unbaked and frozen Taquitos in the air fryer or oven (instructions mentioned above). You can reheat the baked dish in the microwave or air fryer for 4/5 minutes.
