Vegan Tlayudas

The Vegan Tlayudas are the best received. With a crunchy tortilla, creamy refried beans, optional cheese and pork, a  cabbage slaw, avocado, and cilantro, tlayudas are similar to Mexican “pizza.” This reduced-calorie version is packed with nutritious vegetables and can be easily made vegan.

Vegan Tlayudas

Ingredients:

  • Salt.
  • Jalapeno: 1 tbsp.
  • Thinly sliced radish: 4
  • Head cabbage: 1/2
  • Cilantro: 1/4 tsp.
  • Olive oil: 2 tbsp.
  • Fresh lime juice: 3 tbsp.
  • Cucumber: 1/2
For topping:
  • Chicken carnitas: 1 tsp.
  • Turkey chorizo:
  • Avocado cilantro sauce:
  • Water: 4 tbsp.
  • Lime juice: 2 tbsp.
  • Garlic clove: 1

Instructions:

  1. Warm the microwave to 275 degrees Fahrenheit.
  2. Dry tortillas should be toasted for around twenty minutes directly on oven racks (no need for a sheet pan) when crisp.
  3. This is important: they must be dry and crispy—not pliable. Things can be prepared in advance.
  4. In a big bowl, blend the lettuce, cabbage, and carrots, which are radish root, onion, and salt.
  5. Add the cilantro, scallions, jalapeño, and cucumber. Add the zest and a little olive oil after giving it a good toss. Lay it on the counter to rest, or cook it before adding in it.
    If preparing the avocado sauce, do it right away by putting all the ingredients in a food processor and processing whenever smooth.
  6. Taste, adjust the amount of salt and spice, and add extra jalapeño if necessary.
  7. Move to a bowl.
  8. When it comes time to put everything together, reheat the refried beans, add the water to soften them, and then use a fork to mix in a pinch of salt, cumin, and coriander to taste.
  9. If you’re using cheese, preheat the broiler and reheat the chicken or chorizo.
  10. Carefully smear up some beans on the tortilla (like you would pizza sauce on a pizza) to assemble.
  11. You can now add the chicken and cheese and melt them, or you can omit them and keep it vegan.
  12. Add pickled onions or shallots, lime wedges, cilantro sprigs, and spicy sauce as a garnish. While the tortillas are still crisp and the beans are still warm, serve right away (with a knife and fork).
