This Vegan Vanilla Happiness is a creamy & velvety dessert that takes you to the next level of satisfaction with its strong vanilla fragrance. This treat features maple syrup, essence of vanilla/scraped seeds from vanilla bean, plant-based milk, cream of coconut, salt, & cornstarch. You may add the cocoa powder for a chocolate twist. This Vegan Vanilla Happiness only requires a few items and little cooking to give you this delicious dessert with amazing fragrance. It may be served both warm and cold.

INGREDIENTS:

  • 1 tbsp. of coconut cream
  • Vegan milk(unsweetened), two cups
  • 1/2 tsp. of vanilla essence(pure)
  • Pure syrup of maple, one-fourth cup
  • 3 tbsp. of cornstarch
  • A bit of salt

MAPLE SYRUP:

  • It is the plant-based sweetener that provides natural caramel-like sweetness. You may use agave nectar/coconut sugar in its place.

CREAM OF COCONUT:

  • Coconut cream is the vegan alternative to dairy cream, which adds richness to this vegan dessert. As an alternative, you may use cashew cream or vegan butter.

VANILLA FLAVOR:

  • You may go for the pure essence of vanilla or the scraped seeds of the vanilla bean to add the vanilla flavor as a key ingredient of the dessert.

VEGAN MILK:

  • We will require some plant-based milk to avoid dairy while getting the milk goodness & texture as a base liquid of the dessert. You may use soy milk or oat milk for the creamiest texture. Almond milk will give you a nutty flavor. You may go for the coconut milk for the tropical flavor or cashew milk for the ultra-rich flavor.

CORNSTARCH:

  • It is the vegan thickening agent to achieve a pudding-like texture for your dessert. You may use arrowroot powder/tapioca starch as a replacement.

INSTRUCTIONS:

  1. Include the cornstarch along with half a cup of vegan milk in a saucepan & whisk well.
  2. Then, add the remaining vegan milk along with maple syrup & whisk well once more.
  3. Now, place the saucepan on a normal flame and cook constantly till the mixture thickens & starts to bubble.
  4. Lower the flame to low & include the cream of coconut and essence of vanilla.
  5. While mixing continuously, cook for a couple more minutes.
  6. Then transfer it to the serving bowls or ramekins.
  7. You can either serve the Vegan Vanilla Happiness warm or chilled.

TIPS:

  • Cover the dessert with the cling film, making sure the cover contacts the dessert’s surface. It will stop the skin from developing on the outside.
  • Whisking the items before and during cooking will help prevent the lumps & you will end up with smooth pudding.
  • You may also layer the pudding alternatively with fruits and granola to have a layered parfait.
  • To achieve a strong gourmet upgrade, use the fresh bean of vanilla.

FREEZING:

  • We usually don’t recommend freezing this creamy dessert, as the texture will be ruined after defrosting. Still, if you want to freeze it, then you will need to blend it again upon defrosting.
