Ingredients

  • Olive oil 1tbsp
  • Red onion 1/2
  • Zucchini, 1 medium, chopped
  • Mushrooms, 8 ounces, sliced; use edible mushrooms
  • Red bell pepper 1, chopped
  • Garlic cloves 2, minced
  • Ground cumin, 1 1/2 tsp
  • Chili powder 1 1/2 tsp
  • Smoked paprika, 1tsp
  • Dried oregano 1/4 tsp
  • Water 1tbsp
  • Black beans, 15 ounces
  • Lime Juice 1/2 tsp
  • Chopped fresh cilantro, 1/4 cup
  • Kosher salt according to taste
  • Black pepper according to taste
  • Corn tortillas for serving

Avocado Tomatillo Sauce

  • Tomatillo Sauce 1/3 cup
  • Pepitas 1/4cup
  • Avocado 1/2, cut into slices
  • Spinach 1/2cup
  • Olive oil, 2tbsp
  • Lemon juice, add according to taste.
  • Salt 1/4tsp
  • Black pepper crushed, 1/4 tsp

For topping

  • Avocado, fresh chopped cilantro, grated cabbage, pico de gallo

Instructions

  1. Preparation of Avocado Tomatillo Sauce
  2. Add Avocado Tomatillo Sauce, pepitas, avocado, spinach, and olive oil into a blender.
  3. Blend all ingredients until it gives a smooth texture.
  4. Now, sprinkle fresh lemon juice, salt, and black pepper. Mix the ingredients
  5. The tasty Avocado Tomatillo Sauce is ready. Store in the fridge.

Stovetop

  1. First, add olive oil to the large pan and heat the oil.
  2. Add chopped onion, zucchini, mushrooms, and bell peppers to the warm oil.
  3. Sautee all vegetables for 3-4 minutes or until soft and tender.
  4. Now, add garlic, and cook it for 1-2 minutes
  5. Next, sprinkle chili powder, cumin, smoked paprika, and oregano over the vegetables.
  6. Sautee all vegetables for 2-3 minutes.
  7. Next, add water and tomato paste. Stir it continuously.
  8. Add this mixture to the beans. Cook it for another 1 minute.
  9. Next, add lime juice and cilantro.
  10. According to taste, adjust the quantity of salt and black pepper.
  11. Now, we will assemble the tacos

For assembling

  1. Take a warm corn tortilla, and add the vegetable filling to the center of the tortilla.
  2. Top tacos with fresh chopped cilantro or grated cabbage.

Oven

  1. For baking, first reheat the oven at 300-350 degrees.
  2. Wrap the prepared tortilla in aluminum foil and put it into the oven.
  3. For 10–15 minutes, bake the wraps until light brown.
  4. Once the tortilla wraps are baked, shift into serving plates.
  5. Serve it with tasty avocado salsa sauce and homemade ketchup.
