Vegan Veggie Stir Fry

Ingredients:

Brown rice:
  • Salt 1 tsp.
  • Brown rice 1 cup
  • Water 1 1/4 cups
Veggies:
  • Back sesame seeds for garnish
  • Fresh ginger 1 inch
  • Zucchini 1
  • Carrots 2
  • Bok Choy 2 heads
  • Red bell pepper 2
  • Cauliflower 1/2 head
  • Broccoli 1/2 head
  • Sliced mushrooms 16 oz.
  • White onion 1 large
  • Minced garlic 3 cloves
Sauce:

Arrowroot powder 1 tbsp.
Rice vinegar 2 tbsp.
Minced garlic 2 cloves
Fresh pineapple 1/2 cup
Water 1/4 cup
Tamari or soy sauce 1/2 cup

Instructions:

For the brown rice:
  1. Follow the given instructions on the rice and cook them accordingly.
  2. You can then cook it over the stove or any of the processes you want.
Stir-fry sauce:
  1. Use a high-speed blender and then add all the sauce elements into it and then blend it over high speed.
  2. Take a small pan and then add the mixture to it.
  3. Place the pan over the low heat and then heat the mixture over it, stir in between.
  4. The sauce will then become as much thick as you heat it.
Prepare the veggies:
  1. Saute the garlic, mushroom, onion and then the ginger in a pan until it becomes golden in color.
  2. Then, add up the broccoli, carrot, and then the cauliflower and then cook it for 10 minutes or until the veggies become soft and tender.
  3. Now, add the bok choy, zucchini, and red bell pepper in it, and then cook for another 5 minutes.
  4. Lastly, add the sauce to the veggies and then toss it properly.
  5. Now, take a serving plate and then add a bowl of the brown rice and then the veggies over the cooked rice.
  6. Then, sprinkle the black sesame seeds for garnishing.
