Ingredients:

For the Babka Dough:
  • 1 cup unsweetened almond milk, warmed
  • 2 1/4 tsp (1 packet) active dry yeast
  • 1/3 cup granulated sugar
  • 1/2 cup vegan butter, melted
  • 3 1/2 cups all-purpose flour
  • 1/2 tsp salt
For the Chocolate Filling:
  • 1/2 cup vegan chocolate chips or chopped dark chocolate
  • 1/4 cup cocoa powder
  • 1/4 cup granulated sugar
  • 2 tbsp vegan butter, melted
  • 1 tsp ground cinnamon
For the Chocolate Glaze:
  • 1/2 cup powdered sugar
  • 2 tbsp unsweetened almond milk
  • 1/2 tsp vanilla extract

Instructions:

1. Activate the Yeast:
  • In a small bowl, combine the warm almond milk, yeast, and a pinch of sugar. Allow it to sit for about 10 minutes, or until it becomes frothy.
2. Prepare the Dough:
  • In a large mixing bowl, combine the melted vegan butter, sugar, and salt. Mix well.
  • Gradually add the yeast mixture, followed by the flour. Mix until a soft dough forms.
3. Knead the Dough:
  • Turn the dough out onto a lightly floured surface and knead it for about 5 minutes until it’s smooth and elastic.
4. Let the Dough Rise:
  • Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise for about 1 hour, or until it has doubled in size.
