INGREDIENTS:
ORANGE SYRUP:
- 250 ml water
- 60 g granulated sugar
- 120 ml fresh orange juice
- 50 ml vegan amaretto
- 1 tsp grated orange zest
VEGAN CREAM:
- 500 g vegan mascarpone
- One tsp grated orange zest
- 120 ml chilled aquafaba
- One tsp orange juice
- 100 g granulated sugar
FOR THE LAYERS:
- 250 g vegan ladyfingers
FOR DECORATION:
- 1 sliced orange
- 1–2 tsp grated orange zest
INGREDIENT NOTES:
VEGAN LADYFINGERS:
- They give soft cake-like layers in the tiramisu that absorb the orange syrup well. Include thin slices of vegan sponge cake if vegan ladyfingers are not available.
VEGAN MASCARPONE:
- It makes the rich and creamy center of the dessert. We use it instead of traditional mascarpone to make the recipe vegan. Utilize vegan cream cheese as per your choice.
AQUAFABA:
- This ingredient is a liquid made from cooked chickpeas that becomes fluffy when we whip it. You may use a commercial egg replacer as a substitute.
VEGAN AMARETTO:
- It gives a warm, almond-like taste to the syrup, so it works well with the orange. This amaretto gives traditional dessert character to the recipe. You may use 50 ml of orange-flavored syrup for an alcohol-free dessert.
INSTRUCTIONS:
- First, include orange juice, water, orange zest, and amaretto in the saucepan.
- Place the saucepan on a low to medium heat and stir gently so the sugar dissolves well.
- Remove the sauepan from the flame and cool the syrup slightly before dipping the ladyfingers.
- Pour the chilled aquafaba into the mixing bowl and whip on medium-high speed till it gets fluffy.
- Beat vegan mascarpone, sugar, orange zest, and orange juice in a separate bowl.
- Gently fold 1/3 of the whipped aquafaba in the mascarpone mixture with a spatula.
- Continue adding the remaining aquafaba in small batches and stir gently.
- Pour the orange syrup into the bowl and dip vegan ladyfingers in it one at a time.
- Turn them quickly, then take them out of the syrup.
- Include ladyfingers on the bottom of the dish in an even layer.
- Spread half of the vegan orange mascarpone cream on the ladyfingers.
- Do the same steps with the remaining ladyfingers and arrange them on the first cream layer.
- Again, spread the leftover vegan mascarpone cream on the second layer.
- Sprinkle orange zest and arrange thin orange slices on the surface.
- Cover the dish and refrigerate for 5 hours, then make 8 servings and serve them.
