Ingredients:
- 1/2 cup seeds (e.g., pumpkin seeds, sunflower seeds)
- 1/2 cup shredded coconut
- 1/4 cup nut butter (e.g., almond butter, peanut butter)
- 1/2 cup rolled oats (certified gluten-free if needed)
- 1/4 cup dried fruit (e.g., raisins, cranberries, chopped dates)
- 1/4 cup maple syrup or agave nectar
- 1 cup nuts of your choice (e.g., almonds, cashews, walnuts)
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt (optional, depending on whether the nuts are salted)
Instructions:
- Prepare Pan:
- Put parchment paper in an 8 by 8 inch square baking dish, being sure to leave a little overhang for easy removal.
- Combine Dry Ingredients:
- Put the dried fruit, almonds, seeds, shredded coconut, and rolled oats in a big bowl and mix well. Thoroughly blend.
- Prepare Wet Ingredients:
- In a separate microwave-safe bowl, combine nut butter, maple syrup (or agave nectar), melted coconut oil, vanilla extract, and salt (if using). Microwave briefly, just until the mixture is easy to stir.
- Combine Mixtures:

- Press Into Pan:
