Ingredients:

  • 1/2 cup shredded coconut
  • 1/4 cup nut butter (e.g., almond butter, peanut butter)
  • 1/2 cup rolled oats (certified gluten-free if needed)
  • 1/4 cup dried fruit (e.g., raisins, cranberries, chopped dates)
  • 1/4 cup maple syrup or agave nectar
  • 1 cup nuts of your choice (e.g., almonds, cashews, walnuts)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt (optional, depending on whether the nuts are salted)

Instructions:

  1. Prepare Pan:
    • Put parchment paper in an 8 by 8 inch square baking dish, being sure to leave a little overhang for easy removal.
  2. Combine Dry Ingredients:
    • Put the dried fruit, almonds, seeds, shredded coconut, and rolled oats in a big bowl and mix well. Thoroughly blend.
  3. Prepare Wet Ingredients:
