What is enchilada?

Ingredients:
- Tortillas 12
- Sliced lime 1
- Chopped cilantro 1/2 cup
- Green onions 1/2 cup
- Dairy-free sour cream 1/4 cup
- Enchilada sauce 2 cups
Filling:
- Dairy-free sour cream 1/4 cup
- Enchilada sauce 1/4 cup
- Black beans 15 oz.
- Chopped cilantro 1/4 cup
- Sea salt 3/4 tsp.
- Minced garlic 3 cloves
- Colored peppers 2 cups
- Zucchini 2 cups
- Chopped onion 1 cup
Instructions:
- Heat your oven to 350.
- Add the pepper, zucchini, onion, salt, and garlic to the pan and then saute until it combines well until it becomes soft.
- Mix in the cilantro and then cook for 1 minute.
- Then add the sauce, black beans, and sour cream and then cook it until it becomes thick.
- Take a baking dish and then add the enchilada sauce to the base.
- Make enchiladas by adding the stuffing in the center of the tortilla and then place it in the baking dish.
- Cover the tortillas with some sour cream and then the sauce.
- Moreover, you can spread lime, cilantro, and onions over it.
- Bake it for 20 minutes and then it is ready to enjoy.
Notes:
- Besides pepper, you can use any of the veggies. But, remember to keep the same requirement. Otherwise, the recipe will not be the same.
