Vegan Cauliflower Soup

Ingredients

  • Large Floret Cauliflower
  • Olive Oil 2 tbsp
  • Chopped Sweet Onion 1
  • Chopped Garlic Cloves 5
  • Vegetable Broth 2 Cups
  • Dried Thyme 1tsp
  • Full-fat canned Coconut milk, 13 ounces
  • Salt 1/4tsp
  • Black pepper 1/4 tsp

Olive Oil: It is used to sauté the vegetables.
Onion: I used sweet onion to make a flavorful soup.
Vegetable Broth: It makes the soup more tasty.
Coconut Milk: We used coconut milk to add richness and flavor to the soup.

Instructions

Stove Top

  1. First, wash the cauliflower with normal water.
  2. Cut cauliflower floret into small pieces by using a knife. Reserve it.
  3. Warm the olive oil in a pan to medium heat.
  4. Add garlic and onion to this pan. Simmer it for 4-5 minutes until it browns.
  5. Next, add cauliflower florets, dried thyme, and vegetable broth to the same pan.
  6. Reduce the hob flame. Cook it on low heat for 9–15 minutes until cauliflower is soft.
  7. After 15 minutes, blend the mixture by using an immersion blender.
  8. After that, pour canned coconut milk into this mixture.
  9. Stir it well so all ingredients combine well. Cook it for another 2-3 minutes.
  10. Sprinkle over black pepper and salt.
  11. The tasty soup is ready to serve.

Instant Pot

  1. Drizzle the instant pot with olive oil.
  2. Add onion and garlic to this instant pot. Sautee it for 1-2 minutes.
  3. Next, add vegetable broth, cauliflower, and thyme with onions.
  4. Simmer it for one minute. Next, add salt and black pepper to the onions.
  5. Cover the instant pot and cook it for 6–8 minutes at high flame.
  6. After 8 minutes, open the cover and release its pressure.
  7. Serve the yummy soup with crackers or vegan bread.
