Ingredient Notes
Chickpeas: I used canned (cooked) chickpeas instead of raw chickpeas. You can boil raw chickpeas in the pressure cooker for 10/15 minutes.
Green Onion: Replace green onion with white or red onion. The flavor of each variety of onion will be different.
Dill: I used fresh dill. This recipe will also work well with dried dill.
Vegan Mayo: It adds a creamy texture to the sandwiches. Substitute it with Vegan sour cream, ripe avocado, or tahini sauce.
Lemon Juices: We used fresh lemon juice because it refreshes the vegetables.
Bread: I used whole wheat flour. You can swap this bread item with your choice of bread.
Instructions
Preparation of chickpea salad
- Add cooked chickpeas, celery, onion, fresh dill, lemon juice, salt, and black pepper into a food blender.
- Combine all salad items until it provides a smooth texture.
- Transfer this chickpea mixture into a bowl.
- The chickpea salad is ready.
Cut the vegetables
- Next, cut the tomato, cucumber, sprouts, and lettuce into fine slices using a knife.
- Set aside the vegetables.
Assembling
- Take bread loaves and cut them into two halves by using a sharp knife.

Fridge: We will pack the remaining sandwiches in the paper or foil sheet and refrigerate them for 3/4 days. You can also save the chickpea salad in a different jar for 3/4 days and assemble it before serving.
Freezer: You can’t save the sandwiches in the freezer for 2/3 months because vegetables are used. We can freeze the chickpeas in the freezer for 3/4 months.
Reheating: Rewarm the refrigerated leftover sandwiches in a grilled pan over medium flame for 3/4 minutes. You can also reheat it in a microwave oven for 4/5 minutes.
