Servings: Makes approximately 40 crackers
Ingredients:
- 1 cup all-purpose flour (or whole wheat flour for a heartier option)
- 1/2 cup almond flour
- 1 tablespoon nutritional yeast (optional, for added flavor)
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme (or any herb of your choice)
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1/3 cup water
Optional Toppings:
- Sesame seeds
- Poppy seeds
- Flaky sea salt
- Dried herbs (e.g., rosemary, oregano)
Instructions:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the all-purpose flour, almond flour, nutritional yeast (if using), baking powder, garlic powder, onion powder, dried thyme, and salt. Mix the dry ingredients until well combined.
- Add the olive oil to the dry ingredients and mix until the mixture resembles coarse crumbs.
- Gradually add the water to the mixture, a little at a time, and knead the dough until it comes together into a smooth and pliable ball.
- Divide the dough into two portions for easier rolling.
- Place one portion of the dough between two sheets of parchment paper and roll it out into a thin and even sheet, about 1/8 inch thick. Repeat with the second portion.
- Remove the top parchment paper from each rolled-out dough sheet.
- Using a pizza cutter or a sharp knife, cut the dough into desired cracker shapes and sizes. Traditional square or rectangular shapes work well, or you can create fun shapes using cookie cutters.
- Carefully transfer the cut crackers onto the prepared baking sheet, leaving some space between each cracker.
- If desired, sprinkle sesame seeds, poppy seeds, flaky sea salt, or dried herbs over the crackers for added texture and flavor.
- Bake the crackers in the preheated oven for about 12-15 minutes or until they turn golden brown and crispy.
- Once baked, remove the crackers from the oven and let them cool on a wire rack.
- Store the cooled vegan crackers in an airtight container to maintain their crispness.
