INGREDIENTS:
SOUP:
- 20 oz. cremini mushrooms
- 2 tbsp. vegan butter
- 1 tbsp. olive oil
- One yellow onion
- 1 head roasted garlic
- 2 carrots
- 1 tbsp. fresh thyme leaves
- ½ tbsp. fresh sage leaves
- 2 tbsp. white miso
- 4 cups vegetable stock
- ¼ cup unsweetened oat cream
- ½ tsp. black pepper
- Salt

- Reserved sautéed mushrooms
- Crispy sage leaves

INGREDIENT NOTES:
CREMINI MUSHROOMS:
- Add the sliced cremini mushrooms to include a rich, earthy taste and meaty texture. We have to divide them so some can be blended into the soup while the rest can be reserved for the garnish.
VEGAN BUTTER:
- Use the vegan butter to sauté the vegetables and mushrooms. We have to choose a dairy-free variety so it remains vegan.
OLIVE OIL:
- Include the olive oil to help sauté the ingredients and add a light, smooth richness. It will also work well with the truffle-infused oil used for finishing.
YELLOW ONION:
- Add the diced onion to form a savory base and bring a mild natural sweetness to the soup.
ROASTED GARLIC:
- Include the roasted garlic for a mellow, slightly sweet garlic taste. We can use minced garlic instead when we want to save time.
CARROTS:

VEGETABLE STOCK:
- Use the vegetable stock to create the soup foundation. It contains low sodium content, so we can easily add the salt as we like. We have to choose vegetable stock instead of chicken stock to keep the soup vegan.
OAT CREAM:
- Add the unsweetened oat cream make the soup cream without the use of dairy cream. We have to choose a plain, unsweetened variety so it does not change the savory taste.
BLACK PEPPER:
- Add the fresh black pepper to include the strong taste & increase the earthy mushroom flavor.
SALT:
- Add the salt to taste after the miso and stock are incorporated. White miso and stock already contain salt, so we have to adjust carefully.
TRUFFLE-INFUSED OLIVE OIL:
- Drizzle a small amount over the finished soup to add a luxurious truffle aroma and flavor. A little goes a long way.
INSTRUCTIONS:
- First, squeeze the roasted garlic from the head and put it in the corner. Mince the fresh garlic if using.
- Warm the big pan on medium-high heat, then add the vegan butter to it.
- Add the mushroom slices and sauté for five to seven minutes, mixing continuously, then add them to the plate.
- Include the one tbsp. vegan butter & olive oil in the Dutch oven over medium heat.
- Now put the onion & carrots & cook for 5-6 minutes till they get soft.
- Add the roasted garlic, sage, and thyme and cook for one minute till aromatic.
- Add the half uncooked mushroom slices and cook for 4 to 5 minutes so they get soft and eliminate some moisture.
- Include the vegetable stock and white miso, mix, and wait for it to come to a boil.
- Now decrease the flame and simmer for about fifteen to eighteen minutes till the mushrooms & carrots get soft.
- Put the pan on the shelf & blend with immersion blender.
- Add the unsweetened oat cream to the pot and put it on a low flame and warm gently for 2 to 3 minutes, but don’t boil it.
- Now add the black pepper & salt to the soup and mix.
- Add the soup to the vessel and sprinkle the sautéed mushrooms, black pepper, sage leaves, & truffle-infused olive oil on top.

- Yes, we can easily exclude the oat cream and add cashew or coconut cream or full-fat coconut cream instead. It is best to add the cashew cream instead, as the coconut milk will add a light coconut flavor to the soup.
Could we add the chicken stock in the soup?
- No, we can’t because it is not vegan. We have to add the vegan stock so the soup will remain vegan.
Would we include the fresh garlic in this soup?
- Yes, we would easily include the 5 cloves of fresh garlic instead in the soup and toss them with thyme and sage for one minute. It is better to add the roasted garlic, as it provides a mild and sweet taste, while the fresh provides the strong flavor & aroma.
How to thicken the consistency of this mushroom soup?
- You can simmer the soup for some time or blend some additional cooked mushrooms to thicken the consistency. Include some extra cashew cream as well for this purpose.
