Ingredients: For the “Chicken”:

  • 1 block (14-16 ounces) extra-firm tofu, drained and pressed
  • 1 cup unsweetened plant-based milk (such as soy or almond milk)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Coating:

  • 1 cup all-purpose flour
  • 1/2 cup breadcrumbs (preferably panko)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt
  • Vegetable oil, for frying

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tofu into desired chicken-like shapes, such as strips, nuggets, or cutlets.
  3. In a shallow bowl, whisk together the plant-based milk, soy sauce or tamari, apple cider vinegar or lemon juice, garlic powder, paprika, dried thyme, dried sage, salt, and black pepper.
  4. Dip each piece of tofu into the marinade mixture, ensuring it is well coated. Let it marinate for at least 10 minutes, allowing the flavors to infuse.
  5. In a separate shallow bowl, combine the all-purpose flour, breadcrumbs, paprika, garlic powder, dried thyme, dried sage, salt, and black pepper to make the coating mixture.
  6. Dredge each marinated tofu piece in the coating mixture, pressing gently to adhere the mixture to the tofu.
  7. Heat vegetable oil in a large skillet over medium heat. Add enough oil to generously cover the bottom of the skillet.
  8. Carefully place the coated tofu pieces into the hot oil, being cautious not to overcrowd the skillet. Fry the tofu in batches if necessary.
  9. Fry each side of the tofu until golden brown and crispy, approximately 3-4 minutes per side.
  10. Once the tofu is fried, transfer it to a baking sheet lined with parchment paper. Place the baking sheet in the preheated oven for 10-15 minutes to ensure the tofu is heated through and the coating is crispy.
  11. Remove the vegan fried chicken from the oven and let it cool for a few minutes before serving.
