Servings: Makes approximately 16 squares of fudge

Ingredients:

  • 1 cup coconut oil (unrefined, for a coconut flavor, or refined for a neutral flavor)
  • 1 cup unsweetened cocoa powder
  • 1/2 cup smooth almond butter or peanut butter (or any nut butter of your choice)
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: chopped nuts, shredded coconut, or sea salt flakes

Instructions:

  1. In a small saucepan, melt the coconut oil over low heat until it becomes liquid.
  2. Remove the saucepan from the heat and whisk in the unsweetened cocoa powder until the mixture is smooth and well combined.
  3. Stir in the smooth almond butter or peanut butter, pure maple syrup, vanilla extract, and a pinch of salt. Mix well until all the ingredients are fully incorporated and the fudge mixture is smooth.
  4. Line a square baking dish or a loaf pan with parchment paper, leaving some overhang for easy removal of the fudge later.
  5. Pour the fudge mixture into the prepared pan and spread it out evenly using a spatula.
  6. If desired, sprinkle chopped nuts, shredded coconut, or sea salt flakes on top of the fudge for added texture and flavor.
  7. Refrigerate the fudge for at least 2-3 hours or until it sets completely.
  8. Once the fudge is firm, lift it out of the pan using the parchment paper overhang and place it on a cutting board.
  9. Using a sharp knife, cut the fudge into small squares.
  10. Serve the vegan fudge at room temperature and enjoy the rich and velvety flavors of this delightful dairy-free treat.
