Ingredients
- Vegan Butter 1tbsp
- Baby Potatoes 1Ibs
- Minced Garlic 1tsp
For the Gochujang sauce
- Gochujang 1tbsp
- Red Pepper Flakes 1tbsp
- Water 1/2cup
- Maple Syrup 1tbsp
- Soy Sauce 1tbsp
- Salt 1/4tsp
To Serve
- Sliced Green Onions 2
- Roasted Sesame seeds 1tbsp
- Sesame oil 1tsps
Ingredient Notes
Vegan Butter:
- Use this item to simmer the potatoes and other ingredients. Olive oil or regular vegetable cooking oil also works well.
Baby Potatoes:
- Replace it with russet, or regular-sized potatoes.
Gochujang:
- This red chili paste balances the sweet, spicy, and salty flavors.
Red Pepper Flakes:
- I prepared this recipe using red chili peppers, to add a spicy taste to the dish. Alternatively, use gochugaru, a spicy powder usually used in Korean foods.
Maple Syrup:
- We used to add sweetness. It also cut the spicy flavor.
Soy sauce:
- Better to use only gluten-free and low-sodium soy sauce.
Water:
- It is used to balance the consistency of the sauce.
Instructions
- First, wash potatoes with clean tape water.
- Shift to a cutting board and cut into cube sizes using a sharp knife.
- Next, add vegan butter to a non-stick pan and heat it for 3/4 minutes until it melts.
- Add cube-sized potatoes to this pan. Cook it for 5/6 minutes to medium stovetop flame.
- Then, add minced garlic and mix it with potatoes. Simmer it again for 3/4 minutes.
- During cooking, mix it thoroughly by using a cooking spoon to avoid burning.
- Meanwhile, we will prepare the sauce.
- Take a small bowl. Add Gochujang, salt, maple syrup, water, red pepper flakes, and soy sauce.
- Combine all sauce items with a spoon.
- Pour this sauce mixture into the pan. Simmer it until it boils.
- After that, lower the stovetop heat and cook the potatoes with sauce for ten to fifteen minutes, or until they are well cooked.
- Shift the cooked potatoes into a round plate.
- Sprinkle over sesame seeds, sliced green onions, and a few drops of sesame oil.

Storage Information
Fridge:
- Seal the leftover potatoes in a closed box/vessel and refrigerate them for 4/7 days.
Freezer:
- You can freeze the remaining potatoes in a zip-lock plastic bag for 1/2 months. If we store them for 3/4 months, the potatoes will be soggy.
Reheating:
- We can rewarm the chilled potatoes in a microwave oven, burner, or air fryer. The duration time of reheating will be different. A Microwave oven takes 4/6 minutes, Stovetop takes 2/3 minutes, and an air-fryer takes 4/5 minutes.
