Ingredients:

  • 4 cups rolled oats (gluten-free if needed)
  • 1 cup nuts of your choice (e.g., almonds, walnuts, pecans), roughly chopped
  • 1/2 cup seeds (e.g., pumpkin seeds, sunflower seeds)
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup dried fruits (e.g., raisins, cranberries, apricots), chopped
  • 1/4 cup coconut oil, melted
  • 1/4 cup pure maple syrup or agave syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, and chopped dried fruits. Mix well to evenly distribute the ingredients.
  3. In a separate small bowl, whisk together the melted coconut oil, pure maple syrup or agave syrup, ground cinnamon, vanilla extract, and a pinch of salt.
  4. Pour the wet mixture over the dry ingredients in the large mixing bowl.
  5. Stir the mixture until all the dry ingredients are well coated with the wet mixture.
  6. Spread the granola mixture evenly on the prepared baking sheet.
  7. Bake the granola in the preheated oven for about 25-30 minutes or until it turns golden brown, stirring halfway through to ensure even baking.
  8. Once baked, remove the granola from the oven and let it cool on the baking sheet.
  9. As the granola cools, it will become crunchier.
