Ingredients:
- 4 cups rolled oats (gluten-free if needed)
- 1 cup nuts of your choice (e.g., almonds, walnuts, pecans), roughly chopped
- 1/2 cup seeds (e.g., pumpkin seeds, sunflower seeds)
- 1/2 cup unsweetened shredded coconut
- 1/2 cup dried fruits (e.g., raisins, cranberries, apricots), chopped
- 1/4 cup coconut oil, melted
- 1/4 cup pure maple syrup or agave syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, and chopped dried fruits. Mix well to evenly distribute the ingredients.
- In a separate small bowl, whisk together the melted coconut oil, pure maple syrup or agave syrup, ground cinnamon, vanilla extract, and a pinch of salt.
- Pour the wet mixture over the dry ingredients in the large mixing bowl.
- Stir the mixture until all the dry ingredients are well coated with the wet mixture.
- Spread the granola mixture evenly on the prepared baking sheet.
- Bake the granola in the preheated oven for about 25-30 minutes or until it turns golden brown, stirring halfway through to ensure even baking.
- Once baked, remove the granola from the oven and let it cool on the baking sheet.
