Servings: Makes 2 sandwiches

Ingredients:

  • 4 slices of your favorite vegan bread (whole grain, sourdough, or gluten-free)
  • 4-6 tablespoons vegan butter (margarine or coconut oil can be used)
  • 1 1/2 cups shredded vegan cheese (e.g., vegan cheddar, mozzarella, or a blend)
  • 1 tablespoon nutritional yeast (optional, for added cheesy flavor)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Pinch of salt and black pepper, to taste
  • Tomato slices (optional, for added freshness)
  • Vegan pesto or mustard (optional, for added flavor)

Instructions:

  1. In a small bowl, mix the shredded vegan cheese with nutritional yeast (if using), garlic powder, onion powder, salt, and black pepper. This seasoning blend will enhance the cheesy flavor of the sandwich.
  2. Lay out 4 slices of bread on a clean surface. Spread a thin layer of vegan butter on one side of each slice.
  3. Flip two slices of the bread, so the buttered side is facing down. On each slice, add a generous amount of the seasoned vegan cheese.
  4. If desired, add tomato slices or a spread of vegan pesto or mustard on top of the cheese.
  5. Place the remaining two slices of bread on top of the cheese and other fillings, with the buttered side facing upward.
  6. Preheat a non-stick skillet or griddle over medium heat.
  7. Once the skillet is hot, carefully transfer the assembled sandwiches to the skillet.
  8. Cook the sandwiches for about 3-4 minutes on each side or until the bread turns golden brown and crispy, and the cheese inside is melted and gooey.
  9. To ensure even melting of the cheese, you can cover the skillet with a lid while cooking, trapping the heat to melt the cheese.
  10. Once both sides are perfectly grilled, remove the sandwiches from the skillet.
  11. Allow the vegan grilled cheese to cool for a minute before slicing and serving.
