Ingredients

Marinade the Tofu

  • Extra Firm Tofu 14oz
  • Vegan Oil 2tbsp
  • Tamari sauce 3tbsps
  • Balsamic Vinegar 2tbsps
  • Maple syrup 2 tsp
  • Tomato paste 1tbsp
  • Chopped Garlic 1/2tsp
  • Salt 1tsp
  • Black pepper 1/4tsp, or to taste
  • Dried Dill 1/2tsp
  • Ground Coriander 1/2tsp
  • Dried Oregano 1/2tsp
  • Cumin 1/4tsp
  • Cinnamon 1/8tsp

Toppings

  • Pita Bread 3-4
  • Sliced Onion 1
  • Sliced Cucumber 1
  • Grated Lettuce 1 cups
  • Fresh Sliced Tomato 1
  • Tzatziki Sauce
  • Vegan Feta Cheese Crumbles- Optional

Optional Add-ins

  • French Fries
  • Black or green olives
  • Hummus
  • Fresh Chopped Herbs

Instructions

  1. Divide the firm tofu into two halves lengthwise. Cut each half into 4-5 pieces.
  2. Transfer the tofu to a plastic bag and freeze it for a night or 4-5 hours before cooking.
  3. Meanwhile, prepare the tofu marination.
  4. Add tamari sauce, olive oil, maple syrup, chopped garlic, Balsamic Vinegar, Tomato paste,
  5. Dried Dill, salt, black pepper, Ground Coriander, Dried Oregano, cumin, and cinnamon to a mixing bowl.
  6. Combine all ingredients.
  7. Dip the cube-sized tofu into this marination mixture.
  8. Coat it well. Set aside the marinated tofu to a large tray.
  9. Marinade the remaining tofu in the same steps.
  10. Place this tray in the fridge for one hour.
  11. Next, drizzle olive oil over a nonstick pan. Warm this pan over medium heat.
  12. Add marinated tofu to this pan in batches to avoid overcrowding.
  13. Simmer each side of tofu for about 5-6 minutes until its upper layer is golden brown.
  14. Follow the same procedure to cook other marinated tofu.

Assemble the Gyros

  1. Spread the pita bread to a clean place.
  2. Add the first layer of shredded lettuce, the middle layer of marinated tofu, sliced onions, cucumbers, tomatoes, vegan feta cheese crumbles, and the final layer of tzatziki sauce.
  3. Sprinkle over salt and black pepper.
  4. Cover the pita bread in aluminum foil. Fold both sides tightly with aluminum foil so the mixture leaks into the bread.
  5. The tasty and creamy Vegan Gyros are ready.
  6. Serve it with French fries.
