INGREDIENTS:

  • 1 small sugar pumpkin (2 cups pumpkin puree)
  • 1 & ½ cups sugar
  • ½ cup water
  • 1 medium orange
  • 1 cinnamon stick
  • ¼ tsp. ground ginger
  • ¼ tsp. ground nutmeg
  • 1 tsp. vanilla extract
  • Salt

INGREDIENT NOTES:

SUGAR:

  • Include the vegan regular sugar in the jam to make it sweet, and it also helps to thicken the texture.

PUMPKIN:

  • We have to utilize the small sugar pumpkin to make the smooth and naturally sweet foundation of this jam. Cook the pumpkin and make its puree, then measure the quantity to add to the jam to add the indulgent taste.

ORANGE:

  • Add the orange juice & zest to the jam to include the citrus and tangy taste. The orange zest will provide a nice aroma in the jam, which will nicely balance the sweet taste of the jam.

CINNAMON STICK:

  • Include the cinnamon stick to offer the warm & comforting spice taste. Remove the cinnamon from the jam, then add the jam to the jar.

GROUND GINGER AND NUTMEG:

  • Add the nutmeg & ginger powder to the jam to include the soft and warm fall flavors. We have to add it in the measured quantity, or it will overpower the jam.

VANILLA EXTRACT:

INSTRUCTIONS:

  1. Cut the pumpkin in half and roast or steam it till it gets soft, and then remove its seeds.
  2. Take out the flesh and blend it till it gets smooth, and separate the 2 cups from it.
  3. Include the 2 cups pumpkin purée, orange juice, sugar, water, orange zest, & spices in the large pan and mix to combine them.
  4. Put the pan on a medium setting & leave the mixture to get simmer softly.
  5. Decrease the flame to medium-low and cook for around thirty to thirty-five minutes, and mix often to avoid the mixture sticking.
  6. Put the saucepan on the shelf, add the vanilla essence to it, and mix.
  7. Take out the cinnamon and blend the jam till it becomes completely smooth.
  8. Cool the jam properly, then add it to clean jars, close the lids, and put them in the fridge or freezer.
