Recipe: Lentil Oat Burgers

Ingredients:

  • 1 cup dried green or brown lentils
  • 2 1/2 cups vegetable broth or water
  • 1 cup rolled oats (gluten-free if needed)
  • 1/2 cup finely chopped onion
  • 1/2 cup grated carrots
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • Salt and pepper to taste
  • Cooking oil for frying (if pan-frying)

Instructions:

Cooking the Lentils:
  1. Rinse the dried lentils under cold water and drain them.
  2. In a medium saucepan, combine the rinsed lentils and vegetable broth (or water). Bring to a boil, then reduce the heat to a simmer. Cook for about 20-25 minutes or until the lentils are tender but not mushy. Drain any excess liquid.
Preparing the Burger Mixture:
  1. In a large mixing bowl, combine the cooked lentils, rolled oats, finely chopped onion, grated carrots, minced garlic, tomato paste, ground cumin, paprika, cayenne pepper, salt, and pepper.
