INGREDIENTS:

CRUST:

  • 1 cup almond flour
  • 2 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • One tsp. vanilla extract
  • Salt pinch

LEMON FILLING:

  • 1 cup coconut milk
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • ¼ teaspoon turmeric
  • ¼ teaspoon vanilla

INGREDIENT NOTES:

ALMOND FLOUR:

  • Almond flour is used to make the crust of these mini tarts. This flour is naturally gluten-free, so these tarts are good for a lot of diets.

COCONUT OIL:

  • Bind the crust with coconut oil. It also provides a slightly rich taste. Coconut oil firms up when it gets chilled, so it helps to keep the crust in shape.  Use the melted coconut oil for easy.

COCONUT MILK:

  • Use the whole-fat coconut milk to make the smooth & creamy filling. It gets a thick consistency when combined with cornstarch during cooking. It also helps to balance the sharp taste.

LEMON JUICE & ZEST:

  • Lemon juice and zest provide a clean and zesty taste in these tarts. Fresh varieties provide the best taste. It doesn’t match the taste of the store-bought varieties.

CORNSTARCH:

  • Cornstarch helps to make the thick consistency of the filling. It helps to set the tarts when they get chilled. Make the slurry before adding, so there is no lump formation.

INSTRUCTIONS:

  1. Heat the oven to 350 degrees F.
  2. Stir the coconut oil, almond flour, vanilla essence, salt & maple syrup in the dish.
  3. Add the crust mixture to the mini tart pans equally and press firmly to make a uniform base.
  4. Now bake the crust for ten to twelve minutes until it gets lightly golden.
  5. Place the crust in the corners to get set.
  6. Include the coconut milk, cornstarch, lemon juice, turmeric, vanilla, sugar, and lemon zest in the saucepan.
  7. Mix all of these ingredients with the whisk, and then heat them.
  8. Cook the filling on a moderate flame till it gets a smooth consistency and thickens.
  9. Place it on the counter & cool for five minutes.
  10. Chill the dessert for one hour till it sets properly.
  11. Serve chilled.
