Ingredients

  • King Oyster Mushroom, 8 ounces
  • Tamari sauce 2tbsp
  • Olive oil 1tbsp
  • Sesame oil, 1/2 tablespoons
  • Liquid smoke, 1/2 tsp
  • Maple syrup, 1/2 tablespoon
  • Smoked paprika, 1/2 tsp

Tofu scramble

  • Firm tofu, 14 ounces
  • Black salt, 1/2 tsp
  • Crushed Black pepper, add according to taste
  • Turmeric 1/2 tsp
  • Paprika 1/2tsp
  • Nutritional Yeast 3tbsp
  • Non-dairy milk, 1/4 cup
  • Olive oil 1tbsp

Quesadillas Ingredients

  • Mushroom bacon, already mentioned above
  • Tofu Scramble, already mentioned above
  • Vegan cheese, 2 cups, grated
  • Whole-wheat flour Tortilla 8 large
  • Vegan oil 1tbsp

For serving Avocado Salsa

  • Cherry tomatoes 2, cut into two halves
  • Onion 1/2, chopped
  • Cilantro 1/4 cup, chopped
  • Jalapeno 1
  • Fresh lime juice, 1 tablespoon
  • Salt 1/2 tsp, or according to taste
  • Ripe Avocadoes 2 small, cut into diced size

Ingredients Notes

King Oyster Mushroom: I used this mushroom because it gives an umami flavor. You can substitute it with a button or shiitake mushrooms.
Tamari sauce: We used this sauce because it imparts color to the dish and enhances its flavor.
Liquid Smoke: To add smokiness flavor, but it’s optional.
Maple syrup: It is used to adjust the flavors of the dish.
Paprika: This ingredient is used to give a start to the spicy level.
Vegan Cheese: We used vegan-friendly grated cheese to add a cheesy flavor.
Avocados: Ripe avocados are used to prepare the tangy and flavorful sauce.
Fresh lime juice: It adds to give a citrus flavor.
Cherry tomatoes: We used fresh tomatoes. It gives a vibrant visual appeal to the sauce.

Instructions

Preparation of Mushroom Bacons

  1. Heat the oven to 350 degrees.
  2. Next, place a cooling rack on a baking sheet with a rim, and then cover the rack with parchment paper.
  3. Use a few drops of olive oil to grease the parchment paper.
  4. Meanwhile, cut the king oyster mushrooms into lengthwise slices with a knife.
  5. Add the maple syrup, olive oil, tamari sauce, sesame oil, liquid smoke, and smoked paprika in another bowl.
  6. Mix all ingredients until combined well.
  7. For marination, add sliced mushrooms to this mixture. Toss it well with this mixture.
  8. Shift this bowl to a normal place for twenty to thirty minutes.
  9. After marination, place the marinated mushroom on a baking tray sequence-wise.
  10. Bake it for 20-30 minutes until it cooks well.
  11. With the help of a spatula, flip each side of the mushroom.
  12. Bake mushrooms for 3-4 minutes until it get crispy and brown.
  13. After baking, place the mushrooms on a plate. Set aside the plate.

Preparation of Tofu Scramble

  1. With the help of a fork, crumble the tofu into large pieces.
  2. Next, add black salt, nutritional yeast, turmeric, paprika, black pepper, and almond milk in a bowl.
  3. Stir together all the ingredients. Place the mixture aside.
  4. Now, add olive oil to a nonstick pan.
  5. Once the oil is warm, add crumbled tofu with this mixture. Stir it continuously until it combines well.
  6. Next, cook over medium flame for 4–7 minutes or until the tofu color changes.
  7. Tofu scramble is ready.

Preparation of Quesadillas

  1. Place tortillas in a clean place and assemble them.
  2. To the first side of the tortilla, Add a layer of grated vegan cheese, second, add mushroom bacon, and third, add a layer of tofu scrambles.
  3. Place the second tortilla over the first and tie it with a toothpick.
  4. Next, take a large nonstick pan. Add vegan oil. Let it warm over medium heat.
  5. Now, add prepared Quesadillas to the pan.
  6. To press Quesadillas, cover it with a small pan.
  7. Cook each side of Quesadillas for 2-3 minutes or until both sides are crunchy and brown.
  8. To prepare the remaining Quesadillas, follow the same procedure.

Prepare avocado salsa sauce

  1. To make tasty avocado salsa sauce, follow some steps.
  2. Add fresh lime juice, onion, cilantro, salt, cherry tomatoes, and jalapeno to a bowl. Whisk all ingredients.
