Recipe: Vegan Red Lentil Kebabs
Ingredients:
For the Red Lentil Kebabs:
- 1 cup red lentils, rinsed and drained
- 2 1/2 cups water
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup rolled oats (gluten-free if needed)
- 1/2 cup chopped fresh parsley
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (adjust to your spice preference)
- Salt and pepper to taste
- Cooking oil for grilling or pan-frying
For the Tahini Sauce:
- 1/2 cup tahini
- 2 tablespoons fresh lemon juice
- 2 tablespoons water
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
For the Red Lentil Kebabs:
- In a medium saucepan, combine the red lentils and water. Bring to a boil, then reduce the heat to a simmer. Cook for about 12-15 minutes, or until the lentils are soft and most of the water is absorbed. Drain any excess water.
- In a large mixing bowl, combine the cooked red lentils, finely chopped onion, minced garlic, rolled oats, chopped fresh parsley, ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and pepper.
- Mix the ingredients thoroughly until you have a uniform mixture.
- Form the mixture into kebab shapes, either using your hands or kebab skewers. If using skewers, wet your hands to prevent sticking.
