Vegan Shepherds Pie

Vegan Shepherds Pie

Ingredients

  • Mashed Potato topping
  • Medium-sized potato 3pounds
  • Vegan oil 4tbsp
  • Vegan sour cream 1/2cup
  • Fine Garlic Powder 2tsps
  • Salt 1tsp
  • Pepper 1/2tsp
  • Nutritional Yeast 1/2-1 tsp

  • Vegan Butter 3tbsps
  • Large onion 1
  • Sliced Mushrooms 1Ib
  • Celery 1-1/2 cups
  • Carrots 1-1/2cups
  • Parsnips 1-1/2 cups
  • Frozen Peas 1-1/2cups
  • Cooked White Beans 1-1/2cups
  • Chopped garlic cloves 6
  • Salt 1/2tsp, or to taste
  • Crushed Pepper 1/2tsp
  • Fresh thyme leaves 1tsp
  • Dry White Wine 1/2cup
  • Flour 4tbsps
  • Vegetable Broth 3 cups
  • Miso paste 2tsps
  • Dijon Mustard 1tsp
  • Chopped Italian Parsley, 1/2cup

Ingredient Notes

Potatoes: Add Russets and Yukon Gold Potatoes to prepare this dish.
Oil: Add vegan oil, vegan butter, or olive oil. You can also skip it.
Nutritional Yeast: It’s an optional ingredient. You can skip it if you don’t like it.
Mushrooms: Use fresh edible mushrooms. You can add different varieties of mushrooms to your taste. I preferred to use cremini, button, or shiitake mushrooms. All of these give a unique aroma and flavor to the dish.
Peas: It is added to make the dish more appealing.
Dijon Mustard: It is used to add a tangy flavor.

Instructions

  1. First, switch on the oven, and heat it over 375 degrees.
  2. Boil Potatoes
  3. Cut potatoes into equal sizes by using a knife.
  4. Add salt, and water to a large pot, and place it on a burner.
  5. Next, add potatoes to this pot. Boil it over a medium flame for 15-20 minutes until all potatoes are soft.
  6. After that, check the potatoes with the help of a spoon. If the potatoes are well cooked, remove the extra water. Set aside it.

Preparation of Stew

  1. Next, heat vegan oil in a skillet over medium heat.
  2. Add onion and mushrooms to this skillet. Simmer it for 5-10 minutes until the color changes.
  3. Now, add chopped garlic, thyme, carrots, parsnips, celery, pepper, and salt with mushrooms.
  4. Sautee it for 2-3 minutes until carrots, and mushrooms are cooked.
  5. After two minutes, add dry white to this mixture.
  6. Cook it at a slow flame until the wine is absorbed.
  7. Next, add the cooked beans, frozen peas, and flour to this pan.
  8. Combine all ingredients.
  9. Cook it for 4-5 minutes until the flour mixes well.
  10. Next, add half a cup of vegetable broth. Simmer it until it’s absorbed.
  11. Add leftover vegetable broth to thicken the texture of the dish.
  12. After that, add Dijon mustard. Mix it. Switch off the burner hobs.
  13. Check its taste. Add salt, and other seasonings if needed.
  14. Add apple cider vinegar over the dish.
  15. Set aside this pot.

Preparation Of Potato Filling

  1. Next, add boiled potatoes to a pot. Mash it with the masher.
  2. Add vegan sour cream, nutritional yeast, garlic powder, vegan oil, pepper, and salt to this pot.
  3. After that, add a half cup of vegetable broth, or the remaining boiled water to achieve a mild thin texture.
  4. Mix all ingredients until a creamy, and soft texture forms.
  5. Adjust the quantity of the salt, and pepper to your taste.

Assembling the dish

  1. Brush the oven tray with the oil.
  2. Add the first layer of cooked veggies stew.
  3. Next, Spread the creamy potato filling over the stew.
  4. Add a few drops of vegan oil to the layers so it won’t burn.
  5. Open the oven, and put this baking tray in the oven.
  6. For 25-35 minutes, bake it until it’s outside crunchy.
  7. The tasty Vegan Shepherds Pie is ready.

You can use lentils instead of beans. Both are healthy options.
Use fresh and good quality vegetables.

Notes

  1. You can marinate the mushrooms with salt, pepper, and drizzle olive oil. After that, cook it over a medium to slow flame until it’s tender and browned.
  2. Add these marinated mushrooms when all ingredients are cooked.
  3. Add the miso paste with vegetable broth., It gives a unique flavor.
  4. If you are using sunchokes, no need to peel its skin.
  5. Cut into diced shapes, and sprinkle over salt and pepper with oil. Bake in an oven at 400 degrees. Add the sunchokes with the peas.

Refrigerator: You can store the Shepherd’s pie in the refrigerator for 6-7 days. Its taste will remain the same.
Freezer: To freeze, store the leftover shepherd’s pie in a zip lock bag. For 1-2 months, freeze it.
Microwave Oven: You can reheat the frozen leftover shepherd’s pie in a microwave oven for 2-3 minutes.
