Ingredients: Vegan Patty:

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup cooked quinoa
  • 1/4 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 tablespoons nutritional yeast
  • 1 tablespoon soy sauce or tamari (gluten-free option)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
Burger Assembly:
  • 4 vegan burger buns
  • Vegan cheese slices (optional)
  • Burger toppings (lettuce, tomato slices, onion slices, pickles, etc.)
  • Condiments of choice (ketchup, mustard, vegan mayo, etc.)


  1. In a large bowl, mash the chickpeas using a fork or potato masher until they are partially mashed but still have some texture.
  2. Add the cooked quinoa, breadcrumbs, finely chopped onion, bell pepper, nutritional yeast, soy sauce or tamari, smoked paprika, garlic powder, salt, and pepper to the bowl. Mix well until all the ingredients are thoroughly combined.
  3. Divide the mixture into four equal portions and shape each portion into a patty about 1/2-inch thick.
  4. Heat a non-stick skillet or griddle over medium heat. Place the patties onto the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and crispy on the outside.
  5. While the patties are cooking, lightly toast the burger buns if desired.
  6. Once the patties are cooked, remove them from the skillet and assemble the burgers. Place each patty on a bun and top with a vegan cheese slice (if using).
  7. Add your desired burger toppings such as lettuce, tomato slices, onion slices, and pickles.
  8. Finish off with condiments of choice, such as ketchup, mustard, or vegan mayo.
