INGREDIENT NOTES:

ALL-PURPOSE FLOUR:

  • Utilize all-purpose flour to prepare these vegan molasses cookies, and it will provide a soft & tender texture. It will also hold all the ingredients together and help the cookies maintain their shape while baking. We would also utilize whole-wheat pastry flour instead if required, but the cookies may have a slightly denser texture.

BAKING SODA:

Include baking soda to help the cookies rise & spread during baking. It will provide a soft & chewy center with beautifully cracked tops. We would also utilize an appropriate amount of baking powder instead if required, although the final texture may be different.

GROUND CINNAMON:

  • Add ground cinnamon to provide a warm, sweet & comforting flavor. It will also complement the rich taste of molasses and make these cookies especially delicious during the colder months. We would also utilize pumpkin pie spice instead if required.

GROUND GINGER:

  • Utilize ground ginger to provide a slightly spicy & warming flavor. It will also give the cookies their classic gingerbread-like taste and balance the sweetness of the sugar. We would also utilize freshly grated ginger instead if required, using a smaller amount.
