INGREDIENTS:

  • 10–12 lasagna noodles
  • Two tbsp. olive oil
  • 3 cups fresh spinach

  • Use the regular noodles or oven-ready noodles to make this dish. Add some additional sauce to oven-ready noodles. Regular noodles provide the soft texture, while the oven ones provide the firm layers like lasagna sheets.

MUSHROOMS:

  • We use a variety of mushrooms in this recipe. Cremini or button mushrooms add a deep, savory taste. They release the moisture content during cooking, which helps the base to remain soft.

SPINACH:

  • It is best to use the fresh spinach as it cooks quickly and blends smoothly in the sauce. Use the frozen spinach if required; thaw and drain all the additional water before use.

RICOTTA CHEESE:

MARINARA SAUCE:

INSTRUCTIONS:

  10. We warm the oil in pan.
  11. Now we add garlic & onions and saute till tender and aromatic.
  12. Then we add mushrooms. Cook until the moisture evaporates.
  13. Add spinach and cook until wilted. Season with salt, pepper, basil, and oregano.
  14. We spread marinara sauce lightly in the dish.
  15. Add the first layer of lasagna noodles.
  16. Spread some vegan ricotta over the noodles.
  17. Now add a layer of the spinach-mushroom mix.
  18. Include some additional marinara sauce over the mixture.
  19. Make all the layers by following the same method to use everything.
  20. Sprinkle mozzarella cheese in last and cover with aluminum foil.
  21. Bake this lasagna for ten to fifteen minutes till upper part gets brown.
  22. When it gets baked, leave it for ten minutes, then serve.
