Ingredients
- Raw Cashews 1cup
- Water 3/4cup
- Olive Oil 1tbsp
- Lemon Juice 1tbsp
- Crushed Garlic 2tsps
- Grated Cucumber 1cup
- Dried Dill 1tbsp
- Chopped Fresh Mint 1/4cup
- Salt 1/4tsp
- Crushed Black Pepper 1/4tsp
Instructions
- Peel off the cucumber skin. Finely chop the mint and shred the cucumber.
- After grating the cucumber, squeeze off any water with kitchen tissue.
- Set aside the bowl.
- Take a good quality high-speed blender. Add olive oil, water, cashews, lemon juice, and garlic to this blender.
- Blend all ingredients until mixed well.
- Add half of the shredded cucumber to this blender and blend it.
- Shift the mixture to a bowl. Add the remaining half cucumber, fresh mint, black pepper, dried dill, and salt to this bowl.
- Mixed all items.
- Manage the flavors of this sauce by adding salt and black pepper if it’s necessary.
