Ingredients
Cashew Cream
- Raw Cashews 1 cup
- Water 1 cup
Sauce
- Olive oil 1tbsp
- Medium Onion 1, chopped
- Chopped Garlic Cloves 5
- Canned Crushed Tomatoes 1
- Nutritional yeast 2tbsp
- Canned Diced Tomatoes 1
- Vodka 1 cup
- Salt 1tsp
- Black pepper, add to taste
Topping (optional)
- Fresh chopped basil
- Vegan shredded Parmesan Cheese
- Red pepper flakes
Ingredient Notes
Cashews:
- We use raw (not roasted) cashews to prepare the homemade cashew cream.
Olive Oil:
- Instead of this, you can use unsalted and soft vegan butter.
Canned Crushed Tomatoes:
- You can use fresh tomatoes, After that, cut them into small sizes and blend them in a high-speed blender to make a smooth paste.
Vodka:
- Use good quality vodka. You can use Absolut and Smirnoff. The taste of both vodkas will be changed.
Instructions
Preparation of sauce
- Pour one tablespoon of oil into a nonstick skillet. Heat this oil on a medium heat for 2/3 minutes.
- Next, chop the onions with a knife. Add chopped onions to this warm skillet.
- Now, sautee it for four to five minutes until it’s light golden.
- Then, add chopped garlic and simmer it for a minute.
- Next, add vodka, crushed tomatoes, nutritional yeast, salt, black pepper, red pepper flakes, and canned tomatoes to this skillet.
- Combine all ingredients with a cooking spoon.
- For 10 to 15 minutes, cook it over a medium flame.
- Meanwhile, we will prepare the cashew cream.
Making of Cashew Cream
- Add raw cashews, and water to a fast blender.
- Now, blend it until it gives a creamy and thick texture.
- Set aside the blender.
Combine sauce and cream
- Once the sauce is cooked, cool it at normal temperature.
- After that, combine it with cashew cream in the blender.
- Blend it until the sauce is creamy.
- The creamy, soft, and velvety vegan vodka sauce is ready.
- Top with grated red crushed pepper flakes, vegan parmesan cheese, and fresh crushed basil.
Substitutions
You can add alternative ingredients as per your convenience, and taste.
Vodka:
- Add freshly squeezed lemon juice and water instead of vodka. it will give a vibrant and flavorful taste.
Cashews:
- Add macadamia nuts as an alternative to cashews to make a cream.
Nut-free:
- It’s optional. You can skip the nuts. You can use tahini sauce or coconut cream as an alternative.
Oil-free:
- Instead of sautee the onion and garlic, cook the garlic and onion in the vegetable broth.

You can prepare the cream in different ways.
Coconut Milk:
- Add full-fat coconut milk or coconut cream to make the coconut cream.
Vegan Coffee Creamer:
- You can add store-bought vegan coffee creamer.
Plant-based milk:
- Soy, almond, or hemp milk is all plant-based milk used to thicken the cream consistency.
Tips
- Serve the Vodka sauce with vegan pasta.

- To make smooth sauce, you can soak the cashews for 24 hours, after that blend in a blender.
